Ingredients:

Serves 4

  • Green onion
  • Half a red and half a green bell pepper
  • Green onion
  • Plain Chobani Greek Yogurt
  • 1 block of extra firm tofu
  • Tomato
  • Olive oil or coconut cooking spray
  • Hot sauce
  • Avocado-mash with salt and pepper to taste
  • Cilantro
  • Monterrey jack cheese
  • White or yellow onion
  • Mushrooms

Cut the tofu into small rectangles/ strips. Season the tofu with salt, pepper and garlic. Cook the tofu with white onion, mushrooms and bell peppers with oil spray on medium heat until tofu is golden on the outsides. (10-ish minutes)

Throw the tofu and veggies into a tortilla, top it with guacamole, tomatoes, green onion, hot sauce, plain Chobani and cheese. Obviously, if you consume a vegan diet, skip the cheese and yogurt.
